Found out a single dinner rush plate can hit 140 degrees in the pass window, and now I can't stop checking
A health inspector told me last week that any hot food sitting under 135 for more than 2 hours has to get tossed, and I realized our window lamp was basically a slow cooler. Bought a $12 probe thermometer the next day and caught three plates at 128 during Friday service. How do you all keep temps up when the pass gets slammed?
