Guy at a fish fry in Cleveland told me to stop tasting with the same spoon, and now I can't unsee it in every kitchen
Last Saturday I was helping out at a church fish fry over on the west side of Cleveland, just doing prep and plating for about 300 people. An old cook named Ray, who had been running fryers since the 80s, watched me taste the tartar sauce and then go right back into the same bowl with that spoon. He grabbed my wrist and said, "How many other spoons you got in this kitchen?" Then he made me count them out loud. There were nine. He told me a story about a wedding reception back in 2011 where a cook did the same thing and half the guest list got sick before the cake was even cut. Since that night I keep a cup of plastic spoons on my station at my regular job, one taste one spoon, toss it. My old sous thinks I'm wasting money but I don't care, it costs me maybe $3 a shift. Has anyone else had an old timer call them out like that, and did you actually stick with the habit or did it fade after a couple weeks?
