Had a prep day so smooth it felt like a fever dream
Last Wednesday I came in at 6am to break down a whole pig and a case of monkfish, and somehow every cut was perfect on the first try. Usually I'm fighting with silver skin or slipping on wet floor mats, but that day the knives were sharp, the walk-in was organized, and I was out the door by 11. Anyone else ever had a shift where everything just clicked like that?
