I finally chose a gas range over induction for my home kitchen remodel
After 12 years cooking on electric at the restaurant I had to pick between gas and induction for my own house. I went with gas even though induction heats up faster and is safer. My old mentor always said a real chef cooks over flame and I guess that stuck with me. Six months in I still love the instant control even if cleaning the grates is a pain. Anyone else stick with a traditional setup just out of habit?

Oh man, I totally get it though - I had an electric hob for years and the second I tried gas at a friend's house it was like a whole new world opened up. There's just something about seeing the flame that feels more real, you know what I mean @stella22?

Well I'll be. I used to be the exact opposite actually. I always thought gas stoves were just for people who liked the idea of cooking over a campfire indoors. But then my daughter got a house with a gas range and I helped her cook Thanksgiving dinner last year. That experience really changed my mind. The control you get with the flame is just so much better than waiting for an electric burner to heat up or cool down. I still have my old electric hob at home but I'm seriously thinking about making the switch after all.
