Just hit 200 covers on a Tuesday night with a 3-person line

We're a small spot in Tacoma and our usual Tuesday is maybe 60 people. Last night we got slammed with a walk-in party of 20 and a bunch of early reservations we missed. My team pushed through it, but I'm worried about keeping quality up if this becomes the new normal. How do you handle a sudden, big jump in volume without hiring more staff right away?

Last year I had to pick between three good job offers and felt totally stuck. What helped me was making a simple list of what I really needed, not just wanted. I put things like commute time and team vibe above salary, which made the choice clear. I agree with @patriciarivera that having options is a nice spot to be in, even if it's stressful. Taking an hour to write down my non-negotiables stopped me from going in circles. What kind of choice are you trying to make right now?

Ever notice how we make these lists but then ignore them when we're actually deciding? I did that with an apartment once, had my perfect checklist, then picked the one with the weird kitchen just because it had a cool fireplace. The list is smart, but your gut fights it hard sometimes.
