My main oven quit halfway through a 200-cover wedding dinner last Saturday.

The temperature dropped fast during the main protein cook. We had to move everything to the combi ovens and the deck oven in the pastry section, which threw the whole timing off. It felt like a circus for about forty minutes. Has anyone else had a major piece of gear fail during a huge push, and what's your backup plan?

Ever think about what you'd do if the power went out completely? Like, no ovens at all... that's the real nightmare scenario for me.

Honestly a full blackout means derek_lee's induction burner is toast too. Gotta bust out the camping gear and cook over a fire like it's the 1800s.

Keep a portable induction burner ready for a quick stovetop backup, it saved my butt once.
