My prep list system fell apart during a 200 cover Friday

Been running the same handwritten prep list for 3 years. Last Friday we got slammed, 200 covers plus a private event, and I just froze. Forgot to pull the duck confit, over-ordered on carrots, ran out of the special sauce by 7pm. Completely my fault, I changed the list format the night before and it threw me off. Anyone else stick to a weird old system even when it's not perfect, just because change makes things worse?

Keep that old system, just add a backup cheat sheet taped to the pass.
