Every catalog pushes those shiny German sets, but I grabbed a single carbon steel pan knife from a shop in Portland last month after my old one chipped for the third time. It took ten minutes to season and holds an edge like nothing I've used in 22 years of line work. Who else has traded down in price but up in performance?

Man, this hits so hard. It's like the whole world convinced us that expensive equals better, but once you actually learn what matters, the simple stuff just works. I see the same thing with cars and bikes and even coffee gear, people paying triple for brand names when the cheaper thing just needs a little care and know-how.
