Swapped my house knives for a single Victorinox and it clicked

I was using these heavy German knives at the restaurant for years and my wrist was killing me. Last month I grabbed an 8-inch Victorinox for prep and my hand didn't cramp once during a 10-hour shift. Anyone else find that lighter blades just work better for long days?

A ten-hour shift with no hand cramp? That's almost hard to believe. I've been cooking professionally for 15 years and I always thought the heavy German stuff was the only way to go, that the weight was a sign of quality. Might have to actually try a Victorinox, because my wrist has been giving me trouble lately too.

Just wait until your wrist gets really bad and you start eyeing those cheap plastic handled knives like they're the holy grail or something...
