That $8 chef's knife I bought at a flea market turned out to be my best tool

Picked up a beat up old knife at a flea market in Phoenix for 8 bucks last summer. Figured it would be trash but the blade had good weight. Sharpened it up and now it holds an edge better than the 120 dollar one I got from the restaurant supply store. Has anyone else found a hidden gem from a random spot like that?

And that's exactly the thing with old flea market knives, the steel quality was just different back then. @shanec61 is right, a good edge retention is something you can't fake with fancy branding. Once you get the hang of properly sharpening a vintage blade it'll outwork most of the new stuff on the market.

@shanec61 got it right about those cheap finds being hidden gems. My best score was a rusty bread knife at a garage sale for 3 bucks that now slices tomatoes like butter after I cleaned it up. Sometimes the random beat up tools just have that secret quality you can't find in the shiny new stuff.

Keep at it and you'll probably find that same flea market knife stays sharp way longer than most expensive ones. My best find was a 5 dollar cleaver that cuts through chicken bones like butter.
