The 16-top reservation that wrecked my Saturday prep flow
Last Saturday in Dallas, a 7pm reservation for 16 showed up 40 minutes early while I was still breaking down fish. Hostess told me they 'just wanted to sit and have drinks', but 20 minutes later the whole table demanded apps and entrees at once. I had to pull my prep guy off the line to act as runner, and my grill station fell behind by 11 minutes on regular tickets. The kitchen manager just shrugged and said 'big tables happen', but nobody checked with the pass or the expo first. That one sit-down cost me an hour of cleanup and I nearly sent out an undercooked salmon because I was rushing. Anyone else get stuck with a group that ignores their own reservation time, or is this just normal weekend chaos elsewhere?
