The Friday that went right for once in my kitchen
I remember this one Friday in July, we had a 50-cover dinner and every single ticket came out clean no fires, no remakes. The whole crew just clicked, and the line was clear by 10:30. Anyone else get those rare nights that remind you why you do this job?

Hell yeah man those nights are the whole reason I still cook.

Wader you got that backwards. Those nights are the reason I keep a backup career in mind. Had a Saturday last month where I spent 4 hours on a brisket only to have the smoker die halfway through. Ended up ordering pizza and the brisket went to the dog. But when it works, yeah those nights feel like you cheated the system somehow. Just don't act like every time is a home run.

My husband had a similar disaster last summer with a pork shoulder, except the dog turned his nose up at it too. Sometimes you just have to laugh and remember these are the stories we'll tell at family dinners years from now, not the perfect ones.
