The sous chef at my old place in Portland called me lazy for not tasting the pickling brine
She said a good chef tastes every step, not just the end, and honestly she was right, my pickles were flat compared to hers, so now I force myself to taste every single component mid-cook, even if it's just salt water, has anyone else had that conversation?
