Thought sous vide steak was overhyped until a cook off between two line guys changed my mind
I figured sous vide was just a fancy way to boil meat in a bag, so I kept searing everything on cast iron at my spot in Austin for 8 years. Last month a new hire challenged me to a blind taste test with 6 cooks, and his bath-cooked ribeye beat mine on texture in 5 out of 6 votes. Now I'm wondering if anyone here runs a water bath during service, or is it still just a prep tool for you?
