TIL trimming pork shoulder takes way longer than anyone warns you about
I spent almost 45 minutes trimming a 12 pound shoulder yesterday and still missed a big chunk of silver skin near the bone. My sous chef laughed and said he used to take an hour his first few years on the line. Has anyone else found a faster way to get that membrane off without losing too much meat?

Question whether forty five minutes of your time is actually that big a deal.

Man forty five minutes is like the length of a full sitcom minus commercials. If I lose that much time looking for my car keys on a Monday morning I'm already behind for the whole week. But yeah I guess I could spare it if it meant saving myself from a bigger headache down the road. Though honestly my track record for planning ahead is so bad I'd probably spend that forty five minutes worrying and then just do the thing anyway. Forty five minutes is basically the time it takes me to decide between two different kinds of cereal at the grocery store. So maybe I'm not the best judge of what counts as a big deal.

Forty five minutes is like the time it takes me to get halfway through a YouTube tutorial before I give up and do it the wrong way. My planning skills are so bad I once spent twenty minutes looking for my phone while I was talking on it. So yeah, I feel like the real headache is just admitting I need to plan ahead in the first place.
