Tricked my whole line into eating 3 day old fish by calling it 'marinated'
We had a batch of cod that was about to turn on a Friday rush at the spot I work in Portland, and I knew the owner would flip if I tossed it. So I threw it in a mix of olive oil, garlic, and a ton of lemon and let it sit for like 40 minutes, then sold it as 'lemon garlic marinated cod' special. Sold out in an hour and two servers asked me for the recipe. I still feel a little bad about it but it worked perfectly. Anyone else ever saved product by just renaming it on the fly?
Stuff like this is basically the oldest trick in the kitchen and you fell right into it, huh. Marinated is just chef code for please dont ask how old it is. Honestly the lemon and garlic thing works because acid masks a lot, but three days is pushing it and you know it. At least nobody got sick, because that would have been a real fun conversation with the owner.
