Unpopular opinion: a line cook at my old spot told me to stop "cooking with my eyes" and it's been bugging me for 2 weeks
He said it while we were plating a rush order of salmon at the place on 5th, maybe 40 covers deep. Told me the fish looked done on the outside but I had zero read on the feel of it. Called it cooking with my eyes not my hands. Thought he was just giving me a hard time, but I've been checking every protein by touch since and I've overcooked 3 racks of lamb I would've sworn were perfect. Anybody else get knocked out of a habit by one random comment from somebody who barely knew them?
