The $40 thermometer that humbled my whole grilling setup at a July 4th cookout in Austin

I was bragging about my pellet smoker holding 225 exactly, then my buddy pulled out his cheap probe and showed me the grate temp was swinging between 190 and 260, so now I'm wondering how many other 'set and forget' claims are just people not measuring the actual thing, has anyone else caught a big discrepancy like that?

Throwing a cheap probe on the grate immediately showed my "steady" smoker was lying to me too.
