Drywall tape bubble hell took me 4 hours

I thought I could just slap some joint compound over a drywall seam and be done in 20 minutes. First coat looked fine until I came back and saw bubbles everywhere under the tape. Tried to smooth them out with more compound, made it worse. Ended up cutting out the whole section, buying mesh tape instead of paper, and watching three different YouTube videos. What should have been a quick fix turned into a full Saturday project. 4 hours total for a 6 foot seam. Has anyone else had paper tape just refuse to stick right?

My buddy tried the same thing and ended up with drywall tape bubbles so bad he just spackled over the whole mess and called it a day.
