Question about patching plaster walls, the 24 hour dry time is a lie?

I patched a crack in my hallway last Tuesday and waited the full 24 hours like the bucket said. Paint still bubbled up this morning. A guy at the hardware store in Tacoma told me plaster needs 48 hours minimum when it's humid, has anyone else hit this with the pre-mixed stuff?

The last time I trusted a bucket's dry time, I ended up repainting that same spot three times. Humidity's got a way of making sure you learn the hard way, apparently.
