I thought trimming a hoof with a heavy toe callus was fine until a horse in my care went lame for a week

Oh man, that reminds me of my friend's horse. The farrier trimmed him too short last year and nicked the quick. It got infected, turned into a whole abscess situation. The poor guy was on stall rest for almost two weeks, needed daily soaking and wraps. It was a huge mess from one little trim.

Yeah, a week is a long time. I've seen a good trim on a heavy callus actually help a horse move better right away.
