I just read that the average jar of sauerkraut contains over 100 billion live bacteria, which is wild to think about.

I found that fact in a library book about gut health and it made me look at my own fermenting crock in the kitchen a whole new way, so has anyone else come across a fermentation fact that made you pause?

What about the fact that most of those bacteria are already dead before you eat it? I read that store bought stuff gets pasteurized, which kills the good bugs. So your own crock is probably the only way to get that huge number of live ones. Makes home fermenting feel way more important.
