Rant: My neighbor said you should never burp a sauerkraut jar more than once a day.

He said it at the community garden on Saturday, but my last batch got moldy when I followed that rule. How often do you actually check your ferments?

Honestly, your neighbor has a point. Opening it too much lets in bad air. I burp mine once in the morning, maybe once at night if it's really active. That's it. My last three batches turned out perfect that way.

Depends on the lid type honestly. My screw tops need a twist every day, but the clamp ones can go longer. Found that out after a messy explosion in my pantry last summer.

My grandma used to say the same thing, just a quick burp to check the pressure. She swore by twice a day max.
