Start by saying this whole cloud bread thing is overblown. I tried it exactly like @the_oliver said with the cornstarch and lower temp and mine still came out tasting like air and eggs with a weird spongy texture. Honestly, I think the rage is warranted because no matter how much science you throw at it, this stuff is never going to replace actual bread. It's like trying to convince yourself a celery stick is a french fry - the physics might work but your taste buds know better. Maybe I'm just bitter because mine looked more like a sad pancake than sandwich bread.

The lower temp thing really helped me too... I was cranking it up and wondering why my cloud bread looked like a burnt frisbee. Tried 300 with a little cream of tartar and it came out way more like actual bread, not as sad.

The trick is folding the egg whites just enough so they hold their shape but stay fluffy. Overmix and you get sad flat discs instead of actual bread. 3 tablespoons of cornstarch instead of the usual flour made mine actually look like sandwich bread. Also, bake at 300F not 350 or the outside burns before the middle sets.
