Frozen wings vs fresh wings, the air fryer made me pick a side

I did a 20 wing test last Saturday in Columbus. Frozen ones went straight in at 380 for 25 minutes, fresh ones got 18 minutes with a flip halfway. The frozen batch came out way crispier on the outside and still juicy inside, the fresh ones turned out a bit dry on the edges. I thought fresh was always better but now I'm not so sure. Anyone else notice frozen meat doing better in the basket than the stuff from the butcher?

Whoa, okay, that's a full on experiment and I respect the dedication. Honestly, I've had the exact same thing happen and it threw me for a loop too. I think the ice crystals mess with the surface somehow, like they create tiny pockets that get super crunchy while the middle stays steamy. Fresh wings are supposed to be the gold standard, but sometimes they just don't hold up to the high heat, especially without a long marinade. Sounds like your frozen method is a winner, I might have to steal that trick.
