PSA: I tried making fries from fresh potatoes vs frozen ones

I had to pick between using fresh russet potatoes or a bag of frozen fries for a quick snack last night. I went with the fresh ones, cut them into sticks, soaked them in cold water for 30 minutes, and patted them dry. They came out way crispier than the frozen ones ever do in my air fryer, but it took more time. Has anyone found a good frozen brand that gets close to that fresh crisp?

Wait you soaked them for 30 minutes? I mean, I just rinse mine off and throw them in. I could never plan a snack that far ahead, I'd just cave and eat the frozen ones while I was waiting. That's some serious patience.

Remember when we tried to soak beans overnight and just ate them raw at 3am?

Thirty minutes just to soak potatoes is wild to me.
