Tried that "flip halfway" advice for fries and it actually worked

Someone in a comment thread said I should flip my fries after 8 minutes instead of shaking the basket. I tried it with a bag of Ore-Ida from Costco and the bottom layer was way crispier than before. Did three batches at 400 degrees and all of them came out even. Anyone else had better luck with flipping vs shaking?

That "flip halfway" thing worked so well for my friend Jenna. She tried it with a bag of frozen crinkle cuts and said the whole batch came out golden, not just the top ones. She's been telling everyone to try it since.

Did you see that America's Test Kitchen tested this? They found that the moisture from the frozen fries keeps the top ones from getting crispy unless you flip them. It makes sense because the steam has to go somewhere. I tried it with thick cut steak fries and the bottom half was definitely better than before.

Wait, do you think flipping them makes that big of a difference for crinkles too? @taylor_patel I totally get the steam thing, I always felt like my frozen fries came out uneven. I tried the flip trick with shoestring fries last week and it was a game changer. The whole pile got crispy instead of just the bottom half, so now I'm a believer.
