Why does nobody talk about how air fryers make roasted veggies taste like candy?

My neighbor Linda, who's 72 and has been cooking since forever, handed me a tuft of her air fryer broccoli at our block party last Saturday and I swear it tasted like caramelized candy, not vegetables. She said she just tossed them in a little oil and garlic powder then let them go at 375 for 12 minutes, no fancy seasonings or tricks. Has anyone else had a veggie turn so sweet in the air fryer that it felt wrong?

Tbh I had the same thing happen with cauliflower last week. Tossed it in a little olive oil and salt then 10 minutes at 380 and it tasted almost like candy.

Cauliflower is weirdly good at being sweet when you roast it right. That caramelization hits different than I expected the first time. Might have to try your timing next time I make it.
