Why does nobody talk about how soggy air fryer wings get?

I was at a BBQ joint in Austin last weekend and the guy next to me swore his air fryer wings come out crispy every time. I've tried 3 different recipes from this sub, even one that dusts them with baking powder, and they still end up steamy after 5 minutes. Am I just not preheating long enough or is there a trick I'm missing? What temp and time actually works for you?

I've had the opposite experience honestly, 400°F for 12 minutes and flip halfway gives me wings that stay crispy even after sitting out for a bit. Your baking powder trick works but you gotta let them rest in the fridge uncovered for a few hours first or the steam gets trapped.

12 hours in the fridge?? That's INSANE to me, @jenny_lane12, I barely have the patience to let them sit for 20 minutes before I start snacking on one raw.

jenny_lane12's fridge trick is probably the real deal, but honestly I've got the attention span of a gnat so I'd 100% end up eating one of those raw wings halfway through the drying time... Not that I've ever done that or anything. I usually do 375 for 14 minutes flipping halfway and they come out alright but yeah after sitting for a bit they get that sad steamy thing going on. Maybe I'll actually try the fridge method next time if I can stop myself from snacking on raw chicken first.
