I crossed 500 sourdough loaves this weekend, and honestly, I had to check my notebook twice because I didn't believe it myself. I started baking back in 2017 after my sister gave me a starter that was supposedly from a bakery in Portland, and I've kept a little log ever since, mostly to track hydration changes. Hitting that number made me think about all the failed batches, the over-proofed disasters, and the one time I forgot salt entirely and served it to my book club anyway. It's not about being perfect, it's just wild that a hobby I picked up on a whim turned into this steady thing I do every single week. The first 100 loaves were rough, I won't lie, but now I can tell when the dough is ready just by how it pulls away from the bowl. Have you guys ever counted how many batches you've done, or do you just wing it and lose track like I almost did?

Man I stopped counting after loaf 37. Then my kitchen scale died and I figured that was the universe telling me to just bake and pray.
