Finally got my sourdough to stop sticking, took 4 tries and a rice flour trick

My loaves kept ripping on the banneton no matter how much flour I used, then a baker in Portland told me to try rice flour instead of AP for dusting. It worked on the first try after 3 failed batches, anyone else switch flours for this and never look back?

Skip the rice flour and just work with wetter dough, less flour on the surface actually helped me keep the shape without sticking. Sourdough wants a little tack, so fighting it with rice flour just masks the real issue.

Ugh, that's such a frustrating struggle, I feel for you. @kai_chen2 makes a decent point about wetter dough, but honestly, that rice flour trick saved my sanity too. Whatever works, right?
