I finally gave in and tried sourdough after years of hating the idea
I was at a farmer's market in Portland last month and this lady handed me a sample of her loaves, which I only took to be polite honestly. But that first bite was so tangy and chewy it actually made me stop and reconsider my whole stance on the starter process. Has anyone else had a random taste test totally flip their opinion on a baking technique they swore they'd never try?

Hang on, is biting into some bread really that life changing though? It's just fermented flour and water at the end of the day. I've had plenty of good bread from the grocery store bakery that didn't require me to keep a living blob in my fridge for weeks on end. You're talking about it like you found religion in a slice of toast. Call me skeptical, but I'm not sure a tangy crust is worth all the hype and starter feeding schedules people swear by.

Read something about how the tanginess comes from the lactic acid building up, which actually made me curious enough to try making my own. Now I'm hooked on that chewy crust, it's wild how one good bite can change everything.
