I went to a wedding in Portland last month and the cake was a total disaster, but it taught me something huge about buttercream.

Tell valp32 buttercream's job is flavor, not just glue.

Maybe the heat taught you buttercream's real job is just holding the cake together.

You're onto something. My last outdoor party turned the fancy piping into a sad, shiny puddle. The cake layers were sliding apart like they wanted a divorce. It made me realize the best summer frosting is just a thin crumb coat you can barely taste. All that fancy work is for air conditioning and Instagram, not real life.

Remember my friend's cake that melted into a colorful soup at the park?
