Rant: I picked fresh yeast over dry and my kitchen turned into a science experiment
Tbh I always used dry yeast from the store. Quick, easy, whatever. But last month I got a block of fresh yeast from a bakery supply shop downtown. Guy said it gives better flavor. First batch was fine, second batch I forgot to put it in the fridge overnight. Woke up to this gray sludge bubbling out of the container onto my counter. Smelled like a brewery mixed with old gym socks. Cleaned it up but my kitchen still had that weird sour smell for 2 days. Has anyone else had fresh yeast go bad on them that fast or did I just get a bad batch?

Wait, so fresh yeast is actually that risky? I used to think people were just being dramatic about the whole "you gotta treat it like a living thing" thing, but your story totally changed my mind. I'll stick with my dry yeast packets, no way I'm dealing with a counter full of gray sludge.

That "treat it like a living thing" line hits hard. It's true though. We expect everything to be a simple on/off switch these days. Like with sourdough starters or keeping houseplants alive. You can't just ignore them for a day and expect them to be fine. Same with fresh yeast, it's literally alive and breathing in your fridge. If you don't feed it or keep it cool, it'll go rogue on you. Dry yeast is just dormant, basically dead until you wake it up with water. Fresh yeast is like a pet that needs constant attention.
