Saw a bakery in Portland proofing dough in the walk-in cooler and it kinda blew my mind
Stopped by a small shop on Division St last month and the owner showed me her setup. She keeps her bulk ferment at a steady 38F overnight because her kitchen runs too warm during service. Anyone else use a cooler for slowing down a ferment instead of a proofer?
