Showerthought: found out a single croissant has 27 layers and I've been rolling mine way too few
I was poking around a baking blog last week and the writer mentioned that a proper croissant dough gets folded into 27 layers before it ever hits the oven. I always thought I was doing great with like 9 or 12, so that number kind of stopped me cold. Tried bumping my folds up on Sunday's batch and the honeycomb inside finally looked like the pictures instead of just squished bread. Now I'm second guessing how many folds everyone else does, do you all really go all the way to 27 or is that just the fancy French standard?
