Sourdough starter kept failing until I stopped feeding it daily
For 6 months I followed the standard feed every 12 hours routine and got nothing but hooch and disappointment. Then a baker in Austin told me to stick it in the fridge and only feed it once a week. I was sure he was crazy, but after 3 weeks of neglect that thing finally doubled and made my best loaf yet. Anyone else find that less attention actually gives you better results, or did I just get lucky with my flour?
