That old baker in Portland who showed me how to fold sourdough

I was working a Saturday shift at this little bakery in Portland two years ago. An old timer named Dave came over and watched me struggle with wet dough for a minute. He just said 'stop fighting it, let the dough tell you where to fold' and then he took over for one turn. I swear that one moment changed how I handle high hydration doughs completely. Has anyone else had a random baker drop a tip that clicked instantly?

Oh please, it's bread, not life advice from a guru on a mountain.

Is it just me or does everything need to be overcomplicated these days?
