That YouTube tip about proofing baskets changed my whole process
I saw a video from a bakery in Portland where they said to mist the banneton lightly and then dust with rice flour instead of wheat. Tried it on my Saturday sourdough batch and the loaves came out of the baskets without sticking for the first time in maybe 8 attempts. Even my 70% hydration dough behaved. Anyone else found rice flour works better than regular for sticky doughs?
