The $120 proofing box I fought for 8 years finally got replaced
Back in 2016 I bought a cheap proofing box off a garage sale in Tacoma. It held temp okay for a while but the last few years the fan rattled and the door seal peeled, so my doughs kept coming out uneven. Last month I spent $120 on a new one with a digital thermostat, and the difference in my sourdough crumb is night and day. Anyone else hold onto busted gear way longer than they should, and did the upgrade feel worth it?
