PSA: I ate 2 cups of plain cooked barley at 9pm and slept through the night for the first time in 3 months
I always skipped barley because I read it spikes blood sugar, so I stuck to white rice and felt hungry an hour later. Last Tuesday my neighbor in Sacramento handed me a bowl of her soup and I ate around the barley, then got curious and cooked a batch myself. For 5 nights straight I had it with dinner and my 2am wake-ups just vanished, plus my morning readings dropped about 12 points. It turns out the fiber slows everything down way more than I thought, and I was wrong about it being a problem food.
