A barista in Portland showed me the ice cube trick and my iced coffee stopped tasting like watered down sadness
I was at this little spot off Alberta Street in Portland back in March and I ordered my usual iced americano. The barista asked if I wanted it made the right way, which I thought was a weird thing to say, so I said sure. She pulled the espresso shots straight over a handful of ice cubes instead of pouring them into cold water, and then she added the rest of the ice and just a splash of cold water on top. I watched her do it and it took maybe 10 extra seconds. The difference was wild, the coffee tasted bright and it did not get that flat, bitter taste I always got about halfway through my cup. I asked her why it worked and she said hot espresso hitting cold water shocks it, but hitting ice chills it fast so it keeps more of the flavor. I have been doing it at home since, and I even started freezing some leftover coffee into cubes so it never gets weak. Has anyone else tried this, or do you all have a different way to keep iced coffee from going flat?
