A barista told me my pour was too aggressive and it changed my morning routine
I've been making pour over coffee at home for about 2 years now. I thought I had it down pretty well. Last month I went to a small shop in Portland called Fernwood Coffee and ordered a single origin. The barista watched me do a pour over at the counter and said, "You're pouring way too fast and too high up. That's why it's coming out bitter." I was a little annoyed at first, but I tried slowing down and keeping the kettle lower, closer to the slurry. After about a week I noticed the coffee tasted sweeter and less harsh. I also started using a timer and stuck to a 30 second bloom instead of rushing it. Has anyone else gotten feedback like that from a professional that completely changed how they brew at home?

Oh man, that's such a relatable thing. It's funny how sometimes the smallest tweak, like just slowing down, can totally flip the result. It's like that everywhere though, once you learn the "why" behind a habit, it's hard to unsee it.
