I used to just dump grounds in a filter and hit brew... now I weigh beans and time the pour like it's a science experiment.

Honestly, that's the rabbit hole (and it's a fun one). Next you'll be checking water temperature and fussing over grind size, which actually makes a huge difference. It's a little ridiculous but the coffee is so much better.

And the thing is, each little tweak actually makes a noticeable difference. Once you start paying attention to water temp, you realize how many off cups you were drinking before. Grind size is probably the biggest game changer because it controls how fast the water flows through. It's definitely a deeper hole than most people expect when they first start.

My old drip machine with pre-ground coffee still makes a great cup in under five minutes.

That rabbit hole sounds like a lot of work for a cup of coffee. Honestly, just using fresh beans and a decent machine gets me 90% of the way there without all the fuss. The extra steps seem to have a pretty small payoff for the time they take.
