I've been grinding my beans right before brewing for years, but a barista in Portland told me I was actually making it taste worse.

My uncle swears by pre-ground Bustelo.

Fresh ground is always better" is a blanket statement that ignores convenience. Bustelo's pre-ground is roasted dark and ground fine on purpose, it's made for a specific kind of coffee maker. Why chase a perfect grind if the blend itself is built for that consistency?

Oh man, I've been there. That barista might have a point though. You're grinding too fine, too coarse, or your grinder isn't consistent enough. A blade grinder will give you dust and boulders, which over-extracts and under-extracts at the same time, making everything taste muddy and bitter. Grab a decent burr grinder if you can, even a manual one, and aim for a medium grind for drip coffee. If you're using a cheap blade grinder, honestly pre-ground might actually taste better.
