My pour over went from bitter to sweet after one filter swap

I used the same cheap paper filters for 2 years and thought my beans were the problem, then I grabbed a pack of the unbleached ones at a shop in Austin last month and it changed everything. Has anyone else had that kind of difference just from the filter brand, or was it maybe my water temp all along?
