Ngl, cold brew is way overrated and people need to admit it
I've been making coffee at home for about 4 years now, and I keep seeing everyone rave about cold brew like it's the best thing ever. Honestly, it just tastes flat to me. I tried making it 3 different times with different beans from a local roaster in Portland, and every batch came out with this weird sour note that hot brew never has. My buddy swears by his 24 hour steep method, but I think it just hides bad beans behind a smooth texture. Why does everyone act like cold brew is superior when most people I talk to admit they add syrup just to make it drinkable? Anyone else think the hype is just from people who can't handle bitter coffee?

You said it hides bad beans behind a smooth texture, and I think that's exactly what's going on. I've tried cold brew from a shop that uses old Ethiopian beans and it came out tasting like weak chocolate water with none of the fruit notes. It's like the long steep strips out all the actual flavor and just leaves that velvet mouthfeel people mistake for quality. My theory is the less you know about coffee, the more you think cold brew is the peak.

Man you nailed it @anthony763, that mouthfeel trick really does fool people into thinking they're drinking something special when it's just flat and muddy. Cold brew is basically the coffee equivalent of putting ketchup on a bad steak.

Ha! @anthony763 you just described half the hipster coffee shops in my town - charging five bucks for bean tea and calling it art.
