The difference in my local cafe's pour-over setup from 2020 to now is huge

They went from a basic Melitta cone to a full Hario V60 station with gooseneck kettles and scales for each barista. Did a specific brewing method just get that much more popular, or is this a wider trend?

My local spot did the same thing last year. It's definitely a wider trend, cafes are trying to stand out with better quality control. The gear makes a real difference in taste, way more consistent than a regular drip pot. I find myself going there more often now just for the coffee.

Actually, @rowan_reed68, the gear just helps with the grind.
