TIL the diner on Route 9 in Poughkeepsie pre-heats their mugs in a warmer set to 160 and it changed how I taste my own coffee
Stopped at a little diner off Route 9 in Poughkeepsie last week and watched the guy behind the counter pull mugs out of a warmer set to 160 degrees before pouring. I asked why and he said cold ceramic kills the first sip, drops the temp too fast. Tried it at home with my mugs in the oven at 170 for ten minutes and the difference was not subtle at all, the coffee stayed hot way longer and tasted fuller. Now I'm wondering if my mug temp has been the weak link in my whole setup this time. Anyone else mess with pre-heating their cups, and what temp works for you?
Did you run them through the dishwasher first or just straight from the cabinet? I ask because that makes a big difference in how they hold heat. I've been doing this for a couple years now and I just fill the mug with hot tap water while the coffee brews, let it sit a minute, dump it, then pour. Gets me most of the way there without messing with the oven. 170 seems a little high to me, I'd worry about cracking a mug if it's not fully dry going in. Around 150 to 160 is the sweet spot in my book, hot enough to matter but not enough to hurt the mug.
Ha, I always figured pre-heating mugs was a total waste of time until I actually tried it. Now I'm sitting here warming cups like some kind of coffee scientist, and yeah, it's a real difference. Gonna try your tap water trick since 170 in the oven makes me nervous too.
