Why does nobody talk about using a pinch of salt in the grounds?

My morning brew in Austin was tasting super bitter for a week, so I tried adding a tiny bit of regular table salt directly into the basket before brewing. It actually cut the bitterness right away and made the coffee taste smoother! Has anyone else tried this weird kitchen hack?

Oh man, that reminds me of my grandma putting a pinch of salt in the pot when she boiled water for instant coffee. She swore it made it taste less burnt. I never tried it with my own setup though.

Read somewhere that baristas in some high end shops actually do this with shitty espresso blends to even out the flavor profile. It's not about "fixing" good coffee, it's about leveling up mediocre beans. I've tried it with my morning drip when I'm stuck with a cheap bag from the grocery store and it makes a noticeable difference. The bitterness get toned down without making it salty at all. Just gotta be careful not to overdo it or you'll be pouring it down the sink.
